Some time ago I saw the zucchini chips farmers market and thought the idea was brilliant. I bought a bag of chips with spicy basil and found them an unusual, creative snack that is easy to do on mine.

I did not use my food dehydrator to cook this news, because it had not yet arrived. Instead, I threw them in the oven at its lowest temperature (which is about 180 degrees F) and let it dry.

Let me tell you, they do not last long. They were polished off in minutes - they were as addictive.You can double or triple the recipe, the more they shrink in the oven.

They were quite easy to do and you can use any spices you want. I would definitely make a big batch of these for a party as an alternative to potato chips fried.

Baked Zucchini Chips 1 ½ tea oil, coconut, melted

Thinly slice the zucchini with a mandolin or sharp knife. Toss the slices in coconut oil, then coat with spices. You can add extra spices if the zucchini is not lying to your taste.

Cover a baking sheet with parchment paper or Silpat, then spread the slices on top. They can be reconciled, as they shrink during cooking.

Bake at low temperature of your oven until they are crisp to the touch. (Mine took about two hours).
